That's a bit of work when you're hungry. But, I will try it. What about parboiling and the frying? I heard that's how McDonalds does it. You have to admit, they're fries are good. When made fresh. Ask for fries with no salt then add your own. You will get a batch of fries made just for you.

I once read about an italian woman who suspected her husband was cheating on her and it got her so mad she woke up in the middle of the night, filled a pan with oil and heated it up to frying temperature and took the pan to the bedroom and poured the hot oil on the face and body and genitals of her sleeping husband.

That wire rack tip is next level. I searched this up for an alternative, I've been doing paper towels for years. It seems to always make a mess, the paper towels usually just absorb the oil and leave them soggy, definitely a good tip!

I have always boiled by fries first until almost mash tender then left out to cool. Then fry them at a lower temp them at a higher temp. I'll try this and get back to you.

Very good but here some tips : 1- Put a tablespoon of white vinegar in water to stop oxidation. 2- change water every 3 hrs or at least 2 time to washout the starch. Water should be clear at the end. 3 - 1 hr before frying add 1 cup of salt to the water. Or if you live near a clean sea use the seawater. Salt will release water from the potato and believe me you will see the real crispy fries. 4- Rinse the potato in running water to get rid of salt. 5 - dry chips unsung a lettuce spinning. 6- Trust me , I’m a development Chef

Let me give you a tip... Microwave them for 10 to 15 minutes then fry them on high heat...

The amount of restaurants that need need need to watch this is about 99% of all of them. In the 70's and 80's french fries were crisp and nice, but more and more restaurants are forgetting how to make them. It's like they just don't care anymore.

This is very sad to see. Stay away from all kind of vegetable oil. They are loaded with omega-6 and are now the deamons. For fries, use tallow (beef fat), which is now health food. My omega-6:omega-3-ratio is now 2.0:1. Lower than 4:1 is good. More than 10:1 keeps your body in a state of constant inflammation. Many Armericans, and other westerners have 20-40:1.
