Butter for Tourage 250g butter*, room temp Make a 6x6-inch (15x15cm) butter slab using parchment paper or ziploc bag; chill. *Use the best butter available such as Kerrygold. Method Mix all ingredients together on low speed until combine. Increase speed to medium (2nd) and mix until dough will pull away from the sides of the bowl; scraping sides of the bowl as it goes. It should take 8 minutes. Transfer dough in a oiled plastic container, cover with a wet towel or oiled plastic wrap and let rise in a warm area. When the dough has almost tripled in size, turn out onto a lighlty floured work surface or none, punch down the dough – shape into a tight ovale form, flaten and freeze 20 min on each side uncovered – keep refrigerated. Meanwhile, leave butter slab out at room temp for 15 to 30 min; it should be at the same consistency as the dough; firm but supple. Folding Process / Lamination (Tourage) Give one double turn + one single. Double turn (Tour Double): Roll out dough into a ≈6x15 inch (14x35cm) rectangle. Place butter slab in the center and fold the sides over to enclose the butter (do not overlap dough). Seal and roll out into a long and narrow strip ≈6x27-inch (15x70cm) keeping all edges as straight as possible. Begin rolling from the center of the dough towards the edges, and not from one side of the dough all the way to the other side. This technique helps to keep the dough at an even thickness. Always brush out any excess flour before folding. The left edge is folded in to meet the last third on the other side, then the right third is folded in then close like a book. Flaten; wrap up and refrigerate 30 min or more to rest. Single Turn (Tour Simple): Roll out dough (seams set from noon to 6) into a 6x27-inch (15x70cm) strip and fold like a business letter fold (if the dough resist chill it to rest 15 min more). Wrap up and let rest 30 min or more. Roll dough (seams set from noon to 6) into twice its size, cut laminated dough (paton) in half and refrigerate for 10 min. Roll out one half at the time into a 7-inch (18cm) x0.16-inch (4mm) thick rectangle – cut out 7 croissant or 8 chocolate croissant. Repeat with remaining dough. Arrange croissants onto a baking tray and brush with egg-wash – freeze one night (it strengthen the gluten). Space out frozen croissants into 2 trays and let thaw overnight in the refrigerator. Tent thawed croissants with plastic wrap and let proof in a 77/84ºF (25/29ºC) area for about 2 hours or 6 hours at room temp ≈ 68ºF (20ºC). Egg wash a second time and bake. If using a conventional oven: Preheat oven to 400ºF (200ºC) and bake croissants and pains au chocolat for 18 to 20 minutes. Remove from baking tray and transfer to a cooling rack. If using a convection oven: Preheat oven to 375ºF (190ºC) and bake for 15 to 18 minutes.

This takes some time in preparation but you can also use frozen chicken nuggets or popcorn chicken instead of frying your own to make it go quicker. What you'll need: 2 carrots, sliced paper thin 1 green pepper, rough chopped 1/2 onion, rough chopped 8oz can of pineapple chunks 1-1/2 lbs chicken breasts cut into 1" pieces For the batter: 1/3 cup AP flour 1/3 cup cornstarch 1 tsp baking powder 1 tsp soy sauce 1/2 cup water For the sauce: 1 cup sugar 1 cup water 3 Tbsp white vinegar 1 Tbsp ketchup 1 tsp soy sauce 1/4 tsp red food coloring (optional) 3 Tbsp cornstarch To prepare the chicken: Combine batter ingredients in a large bowl. Add chicken pieces to batter and stir to coat. Fry in 350* vegetable or peanut oil for 5-6 minutes or until golden brown and chicken is cooked thoroughly. Drain on paper towels and set aside. To prepare the sauce: Stir all ingredients together and set aside. In a large skillet or wok, heat 2-3 Tbsp oil over medium-high heat. Add carrots, green pepper and onion. Stir fry for 3-4 minutes until just done. Do not brown. Add the sauce mixture and pineapple. Bring just to a boil to thicken. Add chicken pieces and stir to coat. Serve over white or fried rice and enjoy! ***if you use frozen chicken nuggets or popcorn chicken, precook before adding to the cooked sauce.

Betty demonstrates how to make Seasoned Hot and Spicy French Fries. These are great with a grilled steak or burger! Seasoned Hot and Spicy French Fries uncooked white potatoes, peeled and sliced for French fries (I used Russet potatoes, but you may use any type of white potato.) 1 teaspoon salt cornstarch, as needed egg wash, made from lightly beating two eggs and adding ¼ cup water spice mix (1 tablespoon seasoned pepper, ¼ teaspoon ground cayenne pepper, ground sea salt to taste. You may substitute freshly-ground black pepper if you do not have seasoned pepper.) fine, dry bread crumbs, as needed 1 inch peanut oil in heavy pot Place uncooked, sliced potatoes in a pot with enough water to cover them. Add 1 teaspoon salt. Bring to boil over high heat. Reduce heat and cook about 5 minutes, but not until tender. Drain potatoes and rinse with cold water, patting dry with paper towel. Cover potatoes with plastic wrap and refrigerate. When ready to deep fry, assemble the following line-up: 1) Place potatoes on a rack over a tray. 2) Place an adequate amount of cornstarch to coat the potatoes in a bowl beside the potatoes. 3) Make an egg wash by lightly beating 2 eggs and adding ¼ cup water. 4) Make spice mix with 1 tablespoon seasoned pepper, ¼ teaspoon ground cayenne pepper, and a grinding of sea salt, to taste. 5) Place an adequate amount of fine, dry bread crumbs to cover the potatoes in a shallow bowl at the end of the line-up. Now, sprinkle cornstarch over the potatoes to coat lightly. Dip in egg wash to coat. Sprinkle with spice mix. Cover with fine dry breadcrumbs. Heat 1 inch peanut oil to 350 degrees (F) in a pot on the stove. Drop coated French fries in the hot oil, a few at a time. Use a slotted spoon to separate them and watch them carefully as they turn golden. When they are golden, remove them from the hot oil and place them on a platter that is covered with paper toweling to drain. Repeat, until all seasoned, coated fries are deep fried and drained. Serve immediately, while hot. These are good with Ranch dressing, ketchup, and many other dips—but they are spicy enough that they really don't need an accompanying dip! CLASSIC FRENCH APPLE TART Serves 8 For Crust: 1 ¼ cups flour (150 g) 1 tbsp sugar (12 g) ¼ tsp salt (1.5 g) 1 stick cold unsalted butter, cubed (120 g) 1 egg yolk 2 tbsp ice water (30 ml) For the compote: 3 gala apples, peeled, cored and cut into chunks 2 tbsp sugar (25 g) ¼ cup of apple juice (60 ml) ¼ cup of water (60 ml) 1/8 tsp of cinnamon (2 g) zest of 1 lemon For the topping: 2 gala apples, peeled, cored and sliced 1/8 " thin ½ tsp of sugar (2 g) 2 tbsp apricot jam, heated until liquefied (30 ml) juice of ½ a lemon Method: In a bowl of a food processor combine flour, salt and sugar and pulse until combined. And butter cubes a few at a time, pulsing quickly until dough resembles a coarse meal. Beat egg together with water. Add egg mixture, slowly, pulsing just until dough comes together. Turn out onto a floured surface and roll into a ball and then pat down into a disk. Wrap disk in plastic and refrigerate for 30 minutes (or pop in the freezer for 10) Meanwhile, place apple chunks, sugar, juice, water cinnamon and zest in a heavy-bottomed sauce pan. Cover and bring to a boil and let cook for 10 mins. Simmer uncovered until most of the liquid is evaporated. Mask apples into a paste with a fork. Allow to cool completely, it will thicken as it cools. Roll out dough onto a floured surface and fit into a 9" tart pan. Spread a single layer of compote on the bottom, and place in freezer while you prep your apples. Peel, core and slice apples very thin, about 1/8 " thick. Place in bowl and squeeze with lemon juice to prevent browning. Remove tart from the freezer. When placing the apples the idea is to create an escargot pattern. Starting from the outside and working your way into the center. Layer each apple, cut side down, one slightly overlapping the other, making your way all around the tart until you reach the center. Bake at 400F (200 c) for 15 minutes and then reduce heat to 350F (175 c) and bake for 20 more minutes, or until golden brown. Then place under the broiler for 1-2 minutes just until the apples begin to get lightly charred. Place the jam in the microwave and heat on high for 15 secs or until melted. Brush tart with jam to create a nice shine. Et voila! Serve with vanilla ice cream or a dollop of homemade whipped cream. HOMEMADE WHIPPED CREAM Serves 8 Ingredients: 2 cups of heavy cream (480 ml) 2 tbsp powdered sugar (13 g) 1 tsp vanilla extract (5 ml) Method: Combine ingredients and whip until stiff peaks form.
