Authenticity is everything when you wish to replicate a particular look or period. And for the designer-builder of this French farmhouse kitchen, that extended to the craftsmanship as well as the materials. Jon and Susan Reiter of Reiter Fine Home Building wanted to ensure the kitchen in this great room would complement the home's barn-style architecture by Victor Conforti. Nici says ..'I love this easy variation on the original coq au vin recipe. It's a great dish to do for large numbers because it can be prepared the day beforehand and served at the table' http://www.youtube.com/TheWorldKitchen Serves 8 Prep time: 20 minutes Cooking time: 60 minutes You will need: 20g butter 3 rashers smokey bacon, diced 24 baby onions (or shallots), peeled 2 stalks celery, leave whole 24 brown button mushrooms, stalks removed 2 whole chickens - cut into serving sized portions, excess fat removed (or use pre-prepared chicken pieces) 2 Tbsp olive oil 500mls red wine (Pinot Noir or Burgundy) 3 bay leaves 2T fresh thyme 250ml chicken stock 20g plain flour to thicken (optional) Salt and pepper What to do: For this dish, use a large pot or flame/ovenproof casserole dish (Le Creuset or similar) that has a lid. Melt the butter in the pot and add the baby onions (or shallots), celery stalks and bacon. Sauté until golden, remove and set aside. Now sauté the mushrooms in the same pot (no need to wash the pot in between!) for 2-3 minutes. Remove these and set aside. Heat the olive oil in the pot and brown the chicken pieces. If necessary, do this in 2-3 batches so as not to overcrowd the pot. Once finished browning, return all the chicken, onions, celery and bacon to the pot. Add the wine and bring to the boil for 2 minutes -- this allows the alcohol to cook off. Add the chicken stock, bay leaves and thyme. Bring to the boil, cover then simmer for 45 minutes--1 hour (or cover and cook in pre-heated oven at 160°C for 1 hour), until the chicken is very tender and wanting to fall away from the bone. Add the mushrooms and season to taste with salt and pepper. Thicken the sauce if you wish with 20g flour mixed with water, cooking for a further 10 minutes. You want a sauce that is not too thick, not too thin, just right!

http://kitchencabinetvalue.com Country kitchen cabinets presented by Kitchen Cabinet Value 586-580-9436. Country kitchen cabinets determine design in creating the distinctive character of each kitchen. Everyone loves the warmth of a country kitchen. Whether this feeling comes from memories of a grandmother's (or great-grandmother's) kitchen or the style itself, the single design element that defines any kitchen will be the combination of cabinets. The primary characteristic of a country kitchen is flexibility, uniqueness, ease of use and comfort. Cabinets are selected for character, usefulness and personal taste. Within the country kitchen style, however, there are several types, including: • English country • Victorian • French • Cottage • Arts and crafts • Rustic cabin • American farmhouse • Old World style The country kitchen style is eclectic in many ways. This offers the freedom to express personal style and taste, to design something truly unique and to ensure the greatest functionality. Cabinets are chosen to reflect these characteristics and to express individuality. Country style cabinets are typically built with warm natural wood, sometimes with a "pickled" or "bleached" finish, or they are painted in cheerful colors. Cabinets are typically mismatched in color/wood tone and in style and often include an accent piece that might be a free-standing cabinet or a large table that functions as a work island. Selecting country kitchen cabinets can be great fun because you can truly express the character of your family or the nature of family life in your home. The goal will usually be to create a kitchen that is warm, inviting and accessible. Kitchens are typically the place where the family gathers and where friends and family are entertained. Cabinets are sometimes selected for elegance, in which cases, all of the cabinets will match in color. More commonly there will be at least one major piece of cabinetry made of a different wood or painted a different color. Open shelves, glass panel cabinet doors, storage bins, wood range/cooktop hoods and the like combine with exposed apron sinks, antique-style faucets and fixtures, and rustic floor coverings combine to create a lived-in look and feel. The freedom in selecting country kitchen cabinets permits your unique personality to find expression and an opportunity to explore variations in door styles, knobs and drawer pulls and other touches that will make every kitchen unique. Beadboard panel, square raised panel, beaded frame and panel, reveal overlay-panel and frame, and panel are very popular cabinet door style choices. These styles can all be combined freely. When designing the layout of the room, a country kitchen generally includes many different specialty cabinets, drawers and cupboards to maximize space and function for the cook and for the entire family. Glass panel vegetable bins combine very nicely with specially fitted pull out spice shelves, refrigerated drawers, warming ovens, wine coolers and storage units. The great freedom and flexibility presents the greatest opportunity and the greatest challenge in kitchen design, especially if the remodeling budget is limited. The first thought about country kitchen cabinets is often "custom cabinets." For many families, however, the cost of custom cabinetry is prohibitive. Kitchen Cabinet Value works with high quality stock and semi-custom cabinets and customizes them to your specifications. We can often create the country kitchen you want at about the cost of some semi-custom cabinetry. At an affordable price, you can have the high-quality cabinet styles you want and have them customized to serve specific purposes and make a specific contribution to the total design of your kitchen. Country kitchen cabinets can be easier to combine and select that you might think. Kitchen Cabinet Value can save you time, money and provide exactly what you want in your kitchen. kitchen, country kitchen, rustic kitchen, farmhouse kitchen, french country kitchen, kitchen cabinets, country kitchen cabinets, xylothroz http://www.youtube.com/watch?v=sgwg2jjjhUc This video was created by: Kitchen Cabinet Value 20504 Hall Road, Clinton Township, MI 48038 (586) 228-3262 Google Places: http://g.co/maps/ub2fb

Betty demonstrates how to make Seasoned Hot and Spicy French Fries. These are great with a grilled steak or burger! Seasoned Hot and Spicy French Fries uncooked white potatoes, peeled and sliced for French fries (I used Russet potatoes, but you may use any type of white potato.) 1 teaspoon salt cornstarch, as needed egg wash, made from lightly beating two eggs and adding ¼ cup water spice mix (1 tablespoon seasoned pepper, ¼ teaspoon ground cayenne pepper, ground sea salt to taste. You may substitute freshly-ground black pepper if you do not have seasoned pepper.) fine, dry bread crumbs, as needed 1 inch peanut oil in heavy pot Place uncooked, sliced potatoes in a pot with enough water to cover them. Add 1 teaspoon salt. Bring to boil over high heat. Reduce heat and cook about 5 minutes, but not until tender. Drain potatoes and rinse with cold water, patting dry with paper towel. Cover potatoes with plastic wrap and refrigerate. When ready to deep fry, assemble the following line-up: 1) Place potatoes on a rack over a tray. 2) Place an adequate amount of cornstarch to coat the potatoes in a bowl beside the potatoes. 3) Make an egg wash by lightly beating 2 eggs and adding ¼ cup water. 4) Make spice mix with 1 tablespoon seasoned pepper, ¼ teaspoon ground cayenne pepper, and a grinding of sea salt, to taste. 5) Place an adequate amount of fine, dry bread crumbs to cover the potatoes in a shallow bowl at the end of the line-up. Now, sprinkle cornstarch over the potatoes to coat lightly. Dip in egg wash to coat. Sprinkle with spice mix. Cover with fine dry breadcrumbs. Heat 1 inch peanut oil to 350 degrees (F) in a pot on the stove. Drop coated French fries in the hot oil, a few at a time. Use a slotted spoon to separate them and watch them carefully as they turn golden. When they are golden, remove them from the hot oil and place them on a platter that is covered with paper toweling to drain. Repeat, until all seasoned, coated fries are deep fried and drained. Serve immediately, while hot. These are good with Ranch dressing, ketchup, and many other dips—but they are spicy enough that they really don't need an accompanying dip! CLASSIC FRENCH APPLE TART Serves 8 For Crust: 1 ¼ cups flour (150 g) 1 tbsp sugar (12 g) ¼ tsp salt (1.5 g) 1 stick cold unsalted butter, cubed (120 g) 1 egg yolk 2 tbsp ice water (30 ml) For the compote: 3 gala apples, peeled, cored and cut into chunks 2 tbsp sugar (25 g) ¼ cup of apple juice (60 ml) ¼ cup of water (60 ml) 1/8 tsp of cinnamon (2 g) zest of 1 lemon For the topping: 2 gala apples, peeled, cored and sliced 1/8 " thin ½ tsp of sugar (2 g) 2 tbsp apricot jam, heated until liquefied (30 ml) juice of ½ a lemon Method: In a bowl of a food processor combine flour, salt and sugar and pulse until combined. And butter cubes a few at a time, pulsing quickly until dough resembles a coarse meal. Beat egg together with water. Add egg mixture, slowly, pulsing just until dough comes together. Turn out onto a floured surface and roll into a ball and then pat down into a disk. Wrap disk in plastic and refrigerate for 30 minutes (or pop in the freezer for 10) Meanwhile, place apple chunks, sugar, juice, water cinnamon and zest in a heavy-bottomed sauce pan. Cover and bring to a boil and let cook for 10 mins. Simmer uncovered until most of the liquid is evaporated. Mask apples into a paste with a fork. Allow to cool completely, it will thicken as it cools. Roll out dough onto a floured surface and fit into a 9" tart pan. Spread a single layer of compote on the bottom, and place in freezer while you prep your apples. Peel, core and slice apples very thin, about 1/8 " thick. Place in bowl and squeeze with lemon juice to prevent browning. Remove tart from the freezer. When placing the apples the idea is to create an escargot pattern. Starting from the outside and working your way into the center. Layer each apple, cut side down, one slightly overlapping the other, making your way all around the tart until you reach the center. Bake at 400F (200 c) for 15 minutes and then reduce heat to 350F (175 c) and bake for 20 more minutes, or until golden brown. Then place under the broiler for 1-2 minutes just until the apples begin to get lightly charred. Place the jam in the microwave and heat on high for 15 secs or until melted. Brush tart with jam to create a nice shine. Et voila! Serve with vanilla ice cream or a dollop of homemade whipped cream. HOMEMADE WHIPPED CREAM Serves 8 Ingredients: 2 cups of heavy cream (480 ml) 2 tbsp powdered sugar (13 g) 1 tsp vanilla extract (5 ml) Method: Combine ingredients and whip until stiff peaks form.
