Cook a whole turkey on your Big Green Egg or Kamado Style Smoker in record time, yielding moist, flavorful results with the “Beer Can” method. Robyn Lindars of GrillGirl.com starts by making a compound butter of fresh herbs and citrus and rubbing it underneath and on the skin of the turkey. Next, she heats the BGE to 350 degrees, adds wood chips and places the turkey on a "sittin turkey" filled with beer. Robyn uses The FlameBoss smoker controller (http://www.flameboss.com/) to control the temperature of her smoker, while also letting her know when she's reached her optimal internal temperature of 165 degrees for the turkey. The 12 lb turkey is done in a little over 2 hours and is moist and juicy from the beer and compound butter. Go to (The Full recipe can be found at: http://grillgirl.com/2012/11/beer-can-turkey-on-the-big-green-egg/) for step by step recipe and instructions.

Take the guesswork out of grilling by knowing the proper internal cooking temperatures for chicken, fish and beef. By using an instant read thermometer, quickly assess if meat is ready to be taken off the grill for perfect moisture and juiciness without the fear of being over or undercooked. After taking meat of the grill, tent it in foil so that it can "rest" and reabsorb its juices. No more rubber chicken!
