Binging with Babish: World's Greatest Sandwich from Spanglish

Spanglish, the movie your aunt refers to as a "must-watch!", is home to a Thomas Keller-inspired creation known around the internet as "The World's Greatest Sandwich". Can such familiar ingredients earn such a prestigious moniker? Let's find out, and let's take it one step further: by baking our own rustic country loaf to act as the "bread" for our creation. Recipe below! Music: "Cream on Chrome" by Ratatat RECIPE -- *Ingredients* 1c room temperature wtaer 1/2 tsp instant yeast 5.5 oz bread flour 5 oz whole wheat flour 19.25 oz bread flour 2.75 oz rye flour 1 1/3c room temperature water 2 tbsp honey 2 tsp salt *Method* In the bowl of a stand mixer, make a sponge - combine water and yeast until dissolved. Add first two flours and roughly mix, until a tight dough forms. Cover and let rest ferment at room temperature for at least 6 hours, preferably overnight. Add remaining flours, water, and honey to the sponge, and mix until combined. Attach dough hook to stand mixer, and knead on low speed for 15 minutes, until dough is loose and sticky. Add salt during last 3 minutes of mixing. Remove from bowl, place in a large oiled tub, cover with plastic wrap and let rise for 2 hours, until tripled in size. Preheat oven to 450F, with a pizza stone on the middle rack, and a metal pan you don't care about on the rack below. On a well-floured work surface, turn out dough. Fold four corners into the center of the dough, and place in a cheese-cloth lined colander or banneton, and let rise for 45 minutes, or until almost doubled in size. Invert onto a pizza peel lined with parchment paper. Bring two cups of water to a boil. Just before placing in the oven, slash the dough and spray the surface with water from a spray bottle. Slide onto the pizza stone, and pour boiling water into the preheated pan below, closing the oven door immediately. Bake for 35-45 minutes, turning halfway through if not browning evenly - remove from oven when internal temperature registers 210F. Let rest a minimum of 2 hours before slicing. What dish can make any man or woman ache for the touch of Jon Favreau? Pasta Aglio e Olio is the dreamy midnight snack that lives up to its porny portrayal in the foodie-comedy-drama "Chef". Recipe below! RECIPE *Ingredients* 1/2 head garlic, separated and peeled 1 bunch parsley, rinsed 1/2 cup good quality olive oil 1 tsp red pepper flakes 1/2 lb dry linguine 1/2 lemon *Method* Heavily salt a large pot of water, and bring to a boil. Cook pasta to al dente while completing the steps below. Slice the garlic cloves thinly, and set aside. Pick the parsley leaves from their stems, and finely chop. Add olive oil to a large sauté pan, and heat over medium flame until shimmering. Add sliced garlic, stirring constantly, until garlic is barely toasted. Add the red pepper flake and remove from heat. Add the pasta, drained, with about 1/4 cup reserved pasta cooking water. Add lemon juice and parsley, and toss to combine. Season for salt and pepper, and serve. Follow along this week as we make old-school Viennese apfelstrudel, and don't forget the cream. Music - "Cream on Chrome" by Ratatat Binging With Babish Website: http://bit.ly/BingingBabishWebsite Basics With Babish Website: http://bit.ly/BasicsWithBabishWebsite Patreon: http://bit.ly/BingingPatreon Instagram: http://bit.ly/BabishInstagram Facebook: http://bit.ly/BabishFacebook Twitter: http://bit.ly/BabishTwitter -- RECIPE *Ingredients* 1 1/2 cups bread flour (plus more for dusting, sprinkling, filling) 4 tbsp vegetable oil 2 egg whites 1/2 tsp salt 1/2 tbsp lemon juice 1/4 cup warm water (110F) 4 baking apples, peeled and sliced thinly 1/2 cup sugar Zest of one lemon 1/2 cup raisins 1 tbsp cinnamon 1/2 cup finely chopped walnuts, hazelnuts, or almonds 1 stick butter, melted, plus more as needed 1 egg, beaten 1 cup heavy cream 1 tbsp sugar Powdered sugar for garnish Place flour in a large bowl - create a well in the center with your fingers, and fill with vegetable oil, egg whites, salt, and lemon juice. Mix with fingers until just combined, and sprinkle with water. Knead until a sticky dough forms. Turn out onto a lightly floured tabletop, and knead rigorously (slap onto the table about 100 times), until the dough is soft and supple. Place in a lightly oiled bowl and let rest for 30 minutes. Combine apples, sugar, lemon zest, raisins, and cinnamon. Set aside and let liquid weep from apples. Cover a large table with a cotton tablecloth, and liberally dust with flour. Roll out dough on tablecloth until about 24" in diameter, and using floured fists, stretch dough out as large as possible without tearing. Back on the tablecloth, gently tug at edges of dough until it's a rectangle thin enough to see the pattern of the tablecloth underneath. Trim off torn/thick edges. Drizzle with melted butter, and brush until evenly coated. Sprinkle with chopped nuts. Place about 3/4 of apple mixture on one side of the dough rectangle, and using the tablecloth, roll the apples over onto the dough square. Brush the newly-exposed dough covering the apples with melted butter. Roll apples over again, and repeat, until apples are at the center of a long, closed roll. Pinch ends together to seal contents inside, and place seam-side down on a parchment-lined baking sheet. Brush liberally with a beaten egg. Bake for about an hour, basting with melted butter every 10-15 minutes, as soon as the crust begins to look dry. Remove from oven when golden brown. Allow to cool at least one hour before slicing, dusting with powdered sugar, and serving. In a small bowl, combine cream and sugar. Beat to stiff peaks, and pipe into a bowl, served alongside strudel.

Tampopo is a genre-bender ahead of its time, affectionately referred to as a "ramen western". Like spaghetti western. But Japanese. Hence the ramen. It's a play on words, you don't get it. This 1985 foodie flight of fancy features a 'ramen master', who artfully studies and mindfully consumes his bowl of steaming noodles and broth. NOTE: I forgot to mention in the video, this came out absolutely fan-fucking-tastic. The noodles were tender but chewy, the broth was flavorful without being too fishy, and the pork was exquisite.
